Author, baker, recipe developer, grocery buyer, and storyteller, Stacey Mei Yan Fong has built a career centered around one simple idea: food has the power to connect people. Whether she's baking pies, developing recipes, writing, or helping customers discover specialty ingredients at Big Night, Stacey uses every opportunity to share stories through food.
Her debut cookbook, 50 pies, 50 states: An Immigrant's Love Letter to the United States Through Pie, reflects her belief that every recipe has a story worth telling.
From Fashion to Food
While Stacey has worked full-time in the food industry for the past six years, her career didn't begin in the kitchen. Before becoming a baker and author, she spent a decade as a handbag designer, baking in her spare time while pursing her passion project, 50 Pies, 50 States.
When the pandemic brought her fashion career to an unexpected end, Stacey embraced the opportunity to completely change directions. She reached out to bakeries across New York and landed a position at Four & Twenty Blackbirds, one of her favorite pie shops. Around the same time, she received an offer to write her cookbook, leading her to transition from professional baking into recipe development, writing, and freelance food work.
Today, she balances multiple creative roles, including developing recipes, creating food content, working at Big Night, and continuing to share her love of pie with people around the world.
Every Day Looks a Little Different
As a freelancer, no two workdays are exactly alike. Stacey starts each morning with a long walk through Prospect Park with her dog, Nora, giving herself time to plan the day ahead.
From there, she spends time at her desk before moving into the kitchen to bake pies, develop recipes, or test recipes for clients and brands. While freelancing means she rarely clocks out completely, she wouldn't have it any other way.
On an average day, Stacey spend at least six hours on her feet, whether she's baking in the kitchen or exploring Manhattan and Brooklyn. Comfortable footwear has become an essential part of keeping up with her busy schedule.
